Tony Bish Egg 3 Hawkes Bay Chardonnay captures the most compelling individual ferment from six concrete eggs filled with Mendoza clone Chardonnay from the Two Terraces Vineyard. Lemon and orange blossom lead into candied citrus peel, almond, cashew, hazelnut and fresh herbs, with subtle salinity and savoury complexity underneath. The palate is expansive yet tightly focused, combining impressive volume with bright acidity, fine pithy tannins and exceptional length. This is a distinctive, age-worthy expression of Hawke's Bay Chardonnay, with enough freshness to balance its richness. What the winery says:

The fruit comes from the single Two Terraces Vineyard in the Mangatahi sub-region of Hawke's Bay, where regeneratively farmed Mendoza clone Chardonnay is trained on a two-cane VSP trellis. The 2024 growing season was warm and dry, followed by a stable autumn harvest. Whole-bunch pressed Chardonnay juice was placed into six concrete egg fermenters, with vessel No.3 selected for its intensity, power and precision. The finished wine shows lemon and orange blossom, nougat, almond, tarragon, marjoram and candied citrus peel, followed by citrus, fresh herbs, cashew, hazelnut and cinnamon. It has 13.5% alcohol and can be cellared for 6 to 12 years.
