Pares Balta Brut Cava NV

Parés Baltà Brut Cava is a bright, dry traditional-method sparkler from Penedès, Spain, led by Parellada with Macabeu and Xarel·lo. Green apple and pear sit alongside white flowers, citrus and a gentle creamy note, with a lively mousse and clean, refreshing finish. Family-run Parés Baltà traces its winemaking roots to 1790 and farms organically and biodynamically, bringing plenty of identity to what is also a very easy bottle to open. Chill it for aperitifs, tapas, seafood or a round of salty snacks when you want fizz with freshness rather than sweetness.

Parés Baltà describes this as the youngest sparkling wine in its Cava range, made from the traditional Penedès varieties Parellada, Macabeu and Xarel·lo, with Parellada taking the lead. Fruit includes high-altitude vineyard material, while the second fermentation takes place in bottle following the traditional method, with at least 12 months of ageing. The vineyards are organically and biodynamically farmed, and the grapes for the Cavas are harvested by hand. Expect white flowers, green apple, pear and citrus, with a fresh, light and fruity palate.
