What the winery says:
Fruit was harvested in several stages between late March and early April to capture a broad range of natural flavours. The grapes were gently pressed, then cool fermented in stainless steel to preserve freshness and varietal character. A short period on yeast lees added texture, while careful handling retained a small amount of dissolved carbon dioxide that may give the wine a subtle spritz when first poured. The finished wine is lemon-straw in colour, with pineapple, quince, pear drop, rose petal, linden and saffron notes. It is off-dry, brightly structured and finishes with satisfying tension.
