Jip Jip Rocks Sparkling Shiraz is a gloriously Australian take on fizz, bringing ripe plum, blackberry, cherry, chocolate and spice together with a fine bead and a soft, creamy texture. Made from Shiraz grown in South Australia's Padthaway region, it has plenty of dark-fruited richness without becoming heavy, with gentle sweetness keeping the style generous and immediately approachable. Older oak-aged Shiraz adds depth and smoothness, while younger fruit brings freshness and juicy varietal character. Serve it lightly chilled with charcuterie, chocolate dessert, or simply when ordinary bubbles seem a little too predictable.

What the winery says:

The non-vintage blend is predominantly three-year-old Shiraz matured in older French oak barrels, giving the wine integrated fruit and a rich, weighty texture. A smaller portion of younger Shiraz is blended in to provide fresh, ripe fruit character. The Padthaway estate vineyard sits on terra rossa soils, with warm summer days moderated by cooling coastal winds. In the glass, expect deep crimson colour, a brick-red mousse and fine bead, with plum, blackberry, earthy spice and liquorice leading into a soft, creamy finish of cherry, chocolate and spice.
