Felines Jourdan Picpoul de Pinet is Mediterranean summer distilled into a glass. Grown on three distinct sites at the edge of Languedoc's Thau Lagoon - a stretch of coastline better known for its oysters than its vines - this bone-dry white is bright with citrus and crisp green apple, backed by a faint saline edge and a whisper of anise on the finish. Ten weeks resting on fine lees add gentle roundness without blunting its natural snap. The Jourdan family has farmed these vineyards since 1983, blending fruit from all three sites each vintage to keep things fresh, balanced and thoroughly coastal. Serve it properly cold, ideally alongside something that came out of the sea.

Grown across three distinct sites around Pinet - Félines on clay and limestone by the Thau Lagoon, Les Cadastres on chalk and pebbles at the heart of the appellation, and La Coulette on sandy, gravelly red soils near the forest - the grapes are pressed directly and fermented in temperature-controlled stainless steel tanks before resting on fine lees for ten weeks, then blended across all three sites. The winery pairs it with fresh pélardon, oysters and other shellfish, grilled fish, and the traditional dishes of Sète, and notes it will keep well for up to five years.
