Elephant Hill Sauvignon Blanc 2025

Elephant Hill Sauvignon Blanc brings a distinctly coastal Hawke's Bay character to Sauvignon, with bright citrus, lime and green fruit joined by hints of passionfruit, gooseberry and a fresh mineral edge. The fruit comes entirely from Elephant Hill's Sea Vineyard in Te Awanga, planted right beside the Pacific Ocean, giving the wine a cool-climate freshness and restrained, refined feel. A little seasoned French oak and time on lees add softness and texture without getting in the way of that lively acidity. Crisp, dry and beautifully composed, it is an excellent match for blue cod, fresh seafood or lemony chicken.

This is 100% single-vineyard Sauvignon Blanc from the Sea Vineyard in Te Awanga. The wine was cool fermented in a combination of tank and barrel, with 15% matured in seasoned French oak and 85% kept on light lees in tank for six months. Elephant Hill describes a fresh, bright style with citrus and green fruit, gentle acidity, soft texture, minerality and restrained elegance.
