The fruit is harvested during the cool of night to retain freshness and acidity, then pressed and fermented in stainless-steel vats. A secondary fermentation creates the fine bubbles while adding creaminess and texture. The finished wine offers brioche, wild strawberry and pomegranate aromas, followed by gentle creamy flavours and a lively finish. It is Brut in style, vegan and vegetarian friendly, with 11.5% alcohol. Enjoy now or within 18 months, either on its own or mixed with pink gin and soda for a refreshing spritz.
