What the winery says:

The fruit is harvested during the cool of night to preserve freshness and acidity, then pressed and fermented in stainless steel vats. After blending, a secondary fermentation creates the wine’s fine bubbles while adding creaminess and texture. Pale with green hues, it shows green apple and wisteria aromas, followed by apple, pear and fresh lemon flavours. The wine is vegan and vegetarian friendly, made in a light-bodied Brut style, and intended to be enjoyed now or within 18 months.
