Col de’ Salici describes the Brut DOCG as pale straw yellow with greenish reflections, with fruity aromas led by apple and floral notes of wisteria and acacia. It is fresh and pleasantly acidic on the palate, with a harmonious profile and dry finish. The 2025 bottling is 11.5% alcohol and is best served at 6-8°C. Fermentation takes place in stainless steel, followed by secondary fermentation in pressurised tank using the Charmat method to create its sparkle.
