Village Vineyards Snake Bite Pét-Nat is bright, lightly untamed Hawke’s Bay fizz made from organically and biodynamically farmed Syrah. Wild raspberry and juicy red berries meet dried florals, rosemary, cinnamon and a gently savoury edge, with fine natural bubbles and steely freshness driving a dry, energetic finish. Village Vineyards grew from a Havelock North fruit-growing family, with winemaker Rhys Evans bringing home experience gained in France and a decidedly light-touch approach. Chill it properly and bring it out with charcuterie, natural-rind cheese, grilled lamb or anyone who thinks sparkling wine has become a little too predictable.
What the winery says:
Snake Bite is made from Syrah using the ancestral method, with the wine bottled before fermentation has finished so the remaining natural sugars create its bubbles. It is left undisgorged, preserving its character, texture and gently wild appearance. Bright red berries and raspberry are joined by dried florals, rosemary, cinnamon and subtle savoury notes, while an energetic but fine mousse brings light creaminess to the crisp, dry finish. The name dates back to the first release, when a particularly messy attempt at disgorging left the winemaking team covered head to toe in red Syrah sediment.
