Palliser Estate The Griffin Méthode Traditionnelle is Martinborough sparkling with Champagne-level ambition and a distinctly local personality. Nectarine, yellow plum and citrus blossom meet praline, sourdough and toast, while a fine, creamy mousse carries pure orchard fruit through a bracingly fresh, saline finish. Made from equal parts Chardonnay and Pinot Noir, with more than three years resting on lees in bottle, it has the depth for oysters, caviar and proper celebrations - though there is absolutely no requirement to wait for one.
What the winery says:
The fruit is hand-picked from Palliser’s Pinnacles and Woolshed vineyards, then lightly pressed, with a small portion fermented in seasoned oak. After eight months on primary lees, the wine undergoes secondary fermentation in bottle and rests there for three years before disgorgement. The result is pale lemon with a persistent bead, offering nectarine, citrus blossom, fennel, praline, sourdough and yellow plum. Pure orchard fruit, toast-like lees complexity and a creamy mousse come together in a powerful, focused and luxurious sparkling wine.
