Methode Traditionnelle refers to sparkling wine made using the same process as Champagne, with a second fermentation happening inside the bottle rather than in a tank. It's a slower, more labour-intensive method than the one used for Prosecco, and it tends to produce wines with finer bubbles and more complex, bready character from extended contact with the lees. Champagne remains the benchmark region for the style, though excellent examples come from well beyond France too.
