Pure Light Sauvignon Blanc is built from classic Marlborough and Waipara fruit, picked at optimal ripeness and fermented cool in stainless steel to preserve its aromatic purity, then rested on lees to add texture and weight. Once blended, a portion of the alcohol is gently removed using spinning cone technology, leaving a 5.9% wine that keeps its structure and varietal intensity - all citrus, tropical fruit and fresh herbs, balanced by good acidity. Technical specs come in at pH 3.4, TA 6.9g/L and residual sugar of 12.8g/L, and Giesen recommends it alongside Vietnamese spring rolls.
