The palate is crisp and zesty, built around a concentrated citrus core with underlying minerality that carries through to a lively, dry finish. It's designed to be drunk young, though it will hold its shape for a couple of years if you'd rather wait. Try it with a caprese salad of sun-ripened tomatoes, basil and buffalo mozzarella, or a fresh ceviche loaded with seasonal fruit and coriander - the acidity and grassy notes were made for that kind of food.
