Maude Methode Traditionnelle brings Central Otago precision to the party, with lemon blossom, citrus, brioche and biscuit layered over a fine, creamy mousse. Made from Pinot Noir, Chardonnay and Pinot Meunier, it balances gentle almond-like complexity with crisp natural acidity and a clean, persistent finish. Maude's Wanaka-based, family-run team builds the blend around an extensive reserve of back vintages, adding impressive depth and savoury character. It is polished enough for a celebration but relaxed enough for oysters, fish and chips or fried chicken. What the winery says:

Maude combines selected parcels of Central Otago Pinot Noir and Chardonnay from more than 10 vintages spanning 18 years, with Pinot Meunier also listed in the blend. The fruit is hand harvested, gently pressed and fermented in seasoned oak barriques, with partial malolactic fermentation helping to soften the acidity and enrich the palate. The base includes the current season's wine, a portion of the previous season's sparkling base matured for another 12 months in oak, and 15% from a reserve tank containing back vintages dating to 2004. Following secondary fermentation in bottle, the wine spends a further 12 to 18 months on lees before riddling and disgorgement.

"The bouquet for this wine is quite remarkable with scents of complex lees autolysis capturing the first impression followed quickly by baked citrus peel and stone fruit; a gentle toasty nutty quality emerges slowly. On the palate - a creamy texture, firm and bold mousse - flavours of citrus, honey and stone fruit return. A light baked custard note is constant through the tasting; lengthy, balanced and delicious."
