Bryterlater Still Life Sauvignon Blanc takes Sauvignon in a more textural, savoury direction, leaving the shouty aromatics at the door. Tart green plum, grapefruit and tropical fruit meet bright citrus, brioche and a preserved-lemon saltiness, all carried by salivating acidity and a chalky, gently structured palate. Made in North Canterbury by James Opie, this is a characterful alternative for drinkers who enjoy barrel-fermented Sauvignon with freshness as well as substance. Pour it with grilled fish, oysters, goat’s cheese or a properly crisp plate of salt and pepper squid.
What the winery says:
The fruit was picked to balance tropical ripeness with lively acidity, then fermented in barrel without skin contact. The wine spent a further 10 months on lees before being racked by gravity, with a portion of the settled lees added back to build complexity and texture. Expect pineapple, guava, ripe lemon and lime, brioche, saltiness and mouth-watering acidity.
