Champagne Billecart-Salmon Le Rose is considered one of the benchmark rosé Champagnes, built from a blend of forty five percent Chardonnay drawn from top crus, thirty five percent Pinot Noir from the Montagne de Reims and Grande Vallée de la Marne, and twenty percent Meunier from the Vallée de la Marne and the southern slopes of Épernay. Its colour comes from blending in a small amount of still red wine made in house from Pinot Noir, rather than through skin contact. The wine is fermented at low temperature in stainless steel and rests on lees for thirty six months before release, a long ageing period that builds real depth without dulling its freshness.

In the glass it shows a radiant, pale pink hue with fine, persistent bubbles. The nose is subtle and refined, built around red berries and citrus zest with a floral lift, while the palate has a notably creamy texture that moves into wild strawberry and a touch of raspberry on the finish. Chief winemaker Florent Nys aims for balance and precision above all, and the wine is made to pair well with dishes like wild salmon or langoustine carpaccio, as well as red fruit based desserts.
