The Ninot family has worked as coopers and winemakers in Rully, in Burgundy's Côte Chalonnaise, since the fourteenth century, a lineage that today continues through siblings Erell and Flavien, who run the family's thirteen-hectare domaine. Split evenly between Pinot Noir and Chardonnay, the vineyards have been farmed organically since 2017, with the first certified vintage released in 2020, a shift the family made to bring their wines closer still to the limestone terroir beneath them.

Alongside their still Rully and Mercurey wines, the family also produces a Blanc de Blancs Brut, made entirely from French Chardonnay grown on those same limestone slopes and aged slowly in bottle to develop a fine, persistent mousse alongside the bright, orchard-fruit character the style is best known for among Burgundy's producers.
