Hand-picked Hawke's Bay Chardonnay was whole-bunch pressed, with only the free-run juice transferred to concrete egg fermenters. The egg shape creates natural convection currents that keep the yeast lees in suspension, helping build richness and texture while preserving fruit purity. The wine was minimally handled through to bottling. Citrus blossom, white peach, fresh fig and honeydew melon are joined by tarragon, marjoram, nougat and oyster-shell notes. The palate is taut and highly finessed, with citrus, white peach, marzipan and cashew carried by chalky tannins and a long mineral finish. The wine has an alcohol level of 13.6% and can be cellared for up to 10 years.
