Louis Bouillot Perle d’Aurore Rosé Crémant de Bourgogne brings a little more substance to pink bubbles, combining raspberry, redcurrant and strawberry with white blossom, citrus and gentle creamy richness. A fine, soft mousse gives the palate plenty of charm, while bright acidity and a light saline edge keep everything crisp and composed. Made by a Nuits-Saint-Georges sparkling specialist whose history stretches back to 1877, it blends Pinot Noir, Chardonnay and Gamay into a generous but elegant style. It comes dressed for a celebration, but is equally comfortable beside seafood, light appetisers or a bowl of fresh berries.

Perle d’Aurore is a blend of Pinot Noir, Chardonnay and Gamay, with a brief and carefully controlled period of skin contact used to create its delicate pink colour. Each variety and vineyard parcel is handled separately before blending, followed by three months of rest and 12 months ageing on lees in bottle. White blossom, raspberry and redcurrant lead into a rounded, fruit-driven palate with fine bubbles, lively citrus freshness and a clean finish.
