Willunga 100 Cabernet Shiraz is a classic McLaren Vale red blend that brings together the plush fruit and generous mid-palate of Shiraz with Cabernet Sauvignon’s firmer tannins and savoury structure. Blackberry, plum and cherry sit alongside woody herbs, tobacco, warm spice and dark chocolate, giving the wine plenty of richness without losing freshness or definition. It is full-bodied, smoothly textured and built around a lingering, gently chewy finish. A satisfying choice for drinkers who enjoy bold Australian reds, particularly alongside slow-cooked venison, braised beef, roast lamb or a hearty barbecue.

What the winery says:

The blend is 51% Cabernet Sauvignon from McLaren Vale’s Seaview subregion and 49% Shiraz from Whites Valley. The Cabernet was grown in brown sandy loams over ironstone and quartz, while the Shiraz came from alluvial clay, sand and gravel soils. Each parcel was picked and fermented separately in open stainless steel fermenters, with gentle pump overs and plunging. After 10 to 14 days on skins, the wines were basket pressed and later matured in French oak, including 10% new oak, while completing malolactic fermentation. The finished wine shows blackberry bramble, blue fruit, flowering woody herbs, tobacco, cloves and cedar, followed by blackberry, cherry, plum, thyme, dark chocolate and a lingering finish.
