Red Knot Cabernet Sauvignon is a ripe, easygoing South Australian red from Shingleback, blending 97% Cabernet Sauvignon with 3% Touriga Nacional. Blackcurrant, cherry and summer berry fruit meet milk chocolate, cola and polished cedar, while satiny tannins keep the medium to full-bodied palate smooth and composed. Most of the fruit comes from McLaren Vale, with a smaller Coonawarra parcel in the blend. Shingleback's 2021 blend is 97% Cabernet Sauvignon and 3% Touriga Nacional, sourced 88% from McLaren Vale and 12% from Coonawarra. A temperate growing season and slow, steady ripening helped retain natural acidity and develop fine tannin structure. The wine is medium to full-bodied, with blackcurrant, cherry, milk chocolate, cola and polished cedar, followed by fresh summer berries, satiny tannins and a long finish. Alcohol is 14.5%, and the winery suggests cellaring for up to 10 years.
