Fruit comes from elevated sites north of Aix-en-Provence, where cooler nights help preserve acidity and tension. At under 1 g\/L residual sugar it stays properly dry, but there is enough texture to keep it from feeling austere. The vines sit at 300 to 400 metres on lime and sandstone soils with a south-facing exposure. Fruit was harvested at night, gently direct pressed, then fermented under temperature control in stainless steel, with inert gas used throughout to limit oxidation. The wine is 12.5% alcohol, has less than 1 g\/L residual sugar, and is vegan friendly.
