The wine was fermented across stainless steel tanks, French oak hogsheads and German oak fuders, using selected yeasts to emphasise fruit intensity, texture and complexity. Partial malolactic fermentation adds creaminess, while eight months of maturation in tank on lees and in oak builds depth.
