Fruit was picked early in the morning, lightly pressed and fermented cool, predominantly in stainless steel. A small portion went through concrete egg, clay amphora and French oak cuve for texture and weight, followed by four months on light yeast lees. The winery notes fresh capsicum, snow pea, pineapple, mint, lime and cucumber, with a mineral mid-palate and saline finish.
