The grapes were machine harvested at night, then crushed and destemmed. Shiraz and Merlot were vinified separately in 50 tonne tanks, with fermentation beginning at 28°C before being reduced to 24°C. After pressing, the wines completed malolactic fermentation in stainless steel before winemaker John Quarisa assembled the final blend.
