Individual lots were destemmed and cold soaked before traditional plunged fermentation, followed by extended maceration on skins. After pressing, the wines matured for 11 months in a combination of new and seasoned French oak barriques. The winery describes a bright ruby wine with cherry, raspberry and strawberry fruit, savoury herbs, nori and pink peppercorn, finishing long and dry.
