The fruit was whole-bunch pressed and cold settled, then divided equally between stainless steel and French oak. A selected yeast strain was used for a slow, cool fermentation designed to retain freshness and varietal character, while the barrel portion underwent regular battonage to build texture and complexity. The winery describes passionfruit and tropical aromas accented by snow pea pods and white daisies, followed by orange zest, Granny Smith apple, fresh lime and subtle oak and lees notes.
