The fruit comes from Seresin's Raupo Creek vineyard in the Omaka Valley, with amphora playing a central role from fermentation through ageing. The two parcels were hand picked, destemmed and fermented separately in amphora with native yeasts, spending 21 days on skins with gentle daily plunging. After pressing, both returned to amphora for three months on lees, completing malolactic fermentation naturally, before being blended in stainless steel for three weeks. It was bottled without stabilisation, fining or filtration, with only a minimal sulphur addition before bottling.
