The wine was partially fermented in seasoned French and American oak barrels, with malolactic fermentation used to build depth and a rounder palate. After nine months of barrel ageing, the parcels were blended for bottling. Saint Clair describes aromas of melon, ripe stone fruit, tropical fruit, vanilla and oak spice, followed by peach, nectarine and spice on a full, creamy palate.
