Merlot adds roundness and red-fruited softness, while Malbec contributes colour and a subtle spicy edge. Already showing attractive development, it still has the depth to reward further cellaring. Pair it with roast beef, lamb shanks, venison or a rich mushroom casserole.\u003cbr\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWhat the winery says:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThe blend comprises 58% Cabernet Sauvignon, 22% Merlot and 20% Malbec grown in the Gimblett Gravels. Following a long, hot and particularly dry growing season, the fruit was harvested in early April, destemmed and fermented in tank with regular pumping over to extract flavour, colour and tannin. The wine was then matured in French oak barrels, with regular racking used for clarification and freshness. Cabernet Sauvignon brings blackcurrant, lavender and intensity, Merlot contributes red fruit and roundness, and Malbec adds spice.
