Black Biscay clay with limestone deposits helps produce concentrated fruit while retaining finesse and balanced acidity, with coastal breezes moderating daytime heat. The grapes were destemmed and crushed into eight-tonne fermenters, with twice-daily pump overs and gentle extraction at cool temperatures between 20 and 24°C. Fermentation finished in stainless steel before natural malolactic fermentation and 12 months of maturation in seasoned hogsheads, comprising 80% French and 20% American oak.
