The grapes were harvested by hand and vinified separately. After 8 to 10 hours of skin contact, the juice was gently drawn off and fermented in stainless steel at 16 to 18°C. Cold stabilisation prevented malolactic fermentation, preserving the wine's natural acidity and freshness.
