A smart match for roast chicken, pan-fried fish or creamy mushroom pasta, and equally convincing when the occasion simply calls for a generously flavoured glass of Chardonnay.\u003cbr\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWhat the winery says:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThe Chardonnay fruit was picked in stages from late March through April, gently pressed, then transferred as unclarified juice into large French oak puncheons. Primary fermentation occurred naturally with wild yeasts, followed by maturation on the wine's yeast lees. Spontaneous malolactic fermentation began in late spring and was stopped once the desired balance had been reached. The finished wine is dry and 13.5% alcohol, combining pale-gold colour, rich fruit and subtle creaminess with lively acidity, structured texture and a refreshing finish.
