Following gentle pressing, a portion of the juice was transferred directly to barrel for wild fermentation, while the remainder was settled and fermented using selected yeasts. The wine was matured for approximately 10 months in French oak, including 27% new barrels, with 30% undergoing malolactic fermentation to develop richness and texture.
