The grapes came from well-established vines in Grovetown and were hand picked, partially destemmed and gently pressed. After cold settling, the juice was fermented in a combination of stainless steel and seasoned barriques using organic and wild yeasts. Pale lemon in colour, the wine shows baked pear, apple crumble, white blossom, grilled orange, toasted nuts and baking spices, followed by poached pear, star anise and fresh lime.
