The palate is succulent and fleshy, but fresh acidity keeps the fruit bright and the finish nicely balanced. Warm days and cooler nights at the vineyard help Herringbone build generous flavour without losing freshness, making this a particularly appealing style of New Zealand Pinot Gris. Pour it alongside roast pork, salmon or mildly spiced Asian dishes, or simply give it a good chill and enjoy it on its own.

What the winery says:

Herringbone grows its Pinot Gris on the Mangatahi Terraces in Hawke's Bay, where warm daytime temperatures are followed by cooler nights. The winery says these conditions help the wine develop expressive fruit character while retaining fresh, lively acidity. The 2025 shows apricot, rockmelon, poached pear and subtle spice, with succulent fruit, a fleshy texture and a balanced, lingering finish.

What the experts say:

Sam Kim, WineOrbit, 94/100 (2025)
“Beautifully fruited and elegantly fragrant, the bouquet shows apricot, rockmelon, poached pear, and subtle spice aromas.
