The palate is taut and focused, carrying herbs, spice and dried fruit through to tannins that are ripe and true to the region, giving real shape and identity. The grapes were crushed to open-top fermenters with minimal intervention, plunged once daily for gentle extraction, and macerated on skins for about twenty-five days before pressing.
