Picked in late March at modest sugar levels, the fruit was destemmed and lightly crushed. Each block was handled separately, cold macerated for five to six days, then allowed to begin wild fermentation as the tanks warmed. Fermentation ran for 13 to 18 days, followed by a further 15 days on skins, where malolactic fermentation also completed.
