The palate is warm and persistent, with a pleasant touch of oak through the finish. The Nero d'Avola grapes grow around 350 metres above sea level on limestone and clay soils. After harvest, they are destemmed and lightly crushed, then fermented in temperature-controlled stainless steel for eight to ten days with regular pumping over.
