Clones MS, 470 and Limmer were harvested on 13 April, passed through open rollers to retain uncrushed berries, then fermented in stainless steel with Lachancea thermotolerans followed by Saccharomyces cerevisiae and gentle cap management. Malolactic fermentation followed.
