Mild summer conditions, abundant sunshine, low rainfall and cool nights encouraged slow ripening while preserving natural acidity. The grapes were harvested at night, given a short pre-fermentation maceration, then fermented in rotary and sweep-arm fermenters. After malolactic fermentation, the wine matured in oak before final blending.
