Five percent of the Shiraz underwent whole-bunch fermentation. Twelve separate parcels were fermented slowly in open tanks at temperatures below 28°C, with gentle plunging and some co-fermentation with Marsanne and Viognier. Extended maceration followed fermentation to build flavour and texture, before the wine matured for 14 months in 500-litre French oak puncheons of varying ages.
